The Rosemary Grilling Hack

Love grilled food? You don't have to give it up to make it healthier.

When meat is cooked at very high temperatures, especially when it's heavily charred or blackened, compounds called heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) can form. HCAs develop when amino acids and creatine in meat react to high heat. PAHs form when fat drips onto flames or hot coals, creating smoke that settles back onto the food. High-heat cooking can also increase compounds linked to oxidative stress and inflammation.

Use this simple checklist to reduce your exposure while still enjoying your favorite summer cookouts:

☐ 🌿 Make rosemary your grilling MVP. Rosemary contains powerful antioxidants that research suggests may help reduce HCA formation during cooking.
☐ 🧄 Create a seed oil-free marinade or dry rub with rosemary, thyme, garlic, oregano, olive oil, or avocado oil.
☐ 🔥 Avoid heavily blackened or charred meat. Trim away burnt portions before serving.
☐ 🌡️ Cook over moderate heat instead of directly over high flames whenever possible.
☐ 🔄 Flip meat more frequently to minimize charring and reduce flare-ups.
☐ ✂️ Trim excess fat before grilling to reduce smoke and dripping grease.

💚 Remember: A medium-grilled steak with a rosemary-thyme rub is very different from a heavily blackened steak cooked over repeated flare-ups. The degree of charring matters.
