Non-Toxic Recipe of the Week: Stuffed Delicata Squash with Grass-Fed Beef

This stuffed delicata squash recipe is a delicious and hearty meal that’s perfect for the fall season. Made with grass-fed beef and organic ingredients, it’s a wholesome, non-toxic, satisfying, and nutrient-dense dish. Plus, it’s free from seed oils, making it a clean and healthy option for dinner.

Ingredients:

  • 2 organic delicata squash (any type of squash would work), halved lengthwise and seeds removed

  • 1 lb grass-fed/grass-finished organic ground beef

  • 1 small organic onion, finely chopped

  • 2 cloves organic garlic, minced

  • 1 cup organic baby spinach, chopped

  • 1 small organic carrot, grated

  • 1 organic apple, peeled and diced

  • 1/2 teaspoon dried thyme (organic)

  • 1/2 teaspoon dried rosemary (organic)

  • 1/2 teaspoon ground cinnamon (organic)

  • 1/4 teaspoon ground nutmeg (organic)

  • Sea salt and freshly ground black pepper, to taste

  • 1 tablespoon coconut oil or ghee (for cooking)

  • 1/4 cup organic pecans, chopped (optional, for topping)

  • Fresh organic parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with butcher's paper.

  2. Prepare the Squash: Place the halved and seeded delicata squash on the baking sheet, cut side up. Brush the inside of the squash lightly with melted coconut oil or ghee. Sprinkle with a pinch of sea salt and pepper. Roast in the preheated oven for 25-30 minutes or until the squash is tender and caramelizes around the edges.

  3. Cook the Filling: Heat the remaining tablespoon of coconut oil or ghee over medium heat while the squash is roasting. Add the chopped onion and cook until softened— about 5 minutes. Add the garlic and cook for another minute until fragrant.

  4. Brown the Beef: Add the grass-fed ground beef to the skillet and cook, breaking it up with a spoon, until browned and fully cooked through. Drain any excess fat if necessary.

  5. Add the Veggies and Apple: Stir in the chopped spinach, grated carrot, and diced apple. Cook for 3-4 minutes until the spinach is wilted and the apple slightly softens.

  6. Season the Filling: Add the dried thyme, rosemary, cinnamon, nutmeg, sea salt, and pepper to the beef mixture. Stir well to combine all the flavors. Cook for another 2 minutes to let the spices meld together.

  7. Stuff the Squash: Once the delicata squash is done roasting, remove it from the oven. Carefully spoon the beef mixture into each squash half, packing it in well. If using, sprinkle the chopped pecans over the top for added crunch.

  8. Bake Again: Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until everything is heated through and the tops are slightly golden.

  9. Garnish and Serve: Remove from the oven and let cool slightly. Garnish with freshly chopped parsley and serve warm.
