1 ½ cups Almond Flour
½ cup Coconut Flour
1 tsp Baking Powder
1-2 tsp Ground Cinnamon (adjust to taste)
1 tsp Vanilla Extract
4 large Eggs
½ cup Butter, melted
¾ cup Monk Fruit Sweetener
Optional: Zest 1 Orange for a citrus twist
Instructions:
Preheat Your Pizzelle Maker: Preheat your pizzelle maker according to the manufacturer's instructions.
Mix Dry Ingredients: In a medium bowl, whisk together almond flour, coconut flour, baking powder, and cinnamon. Set aside.
Combine Wet Ingredients: In another bowl, beat eggs and monk fruit sweetener together until light and fluffy. Add the melted butter and vanilla extract, and continue to mix until well combined. If using, stir in the orange zest.
Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring continuously until a smooth batter forms.
Cook the Pizzelles: Drop about one tablespoon of batter onto the center of the Pizzell maker. Close the lid and cook for 1-2 minutes or until golden brown. The exact time will depend on your pizzelle maker.
Cool the Pizzelles: Carefully remove the pizzelle from the maker and place it on a wire rack to cool. They will crisp up as they cool.

Finish Cooling: Transfer the cookies to a wire rack and let them cool completely. They will firm up as they cool.
Final Coating: Roll them again in monk fruit sweetener for a snowy effect once completely cool.
